Journey Cafe’s Vege Burger

Ingredients

  • 1 x Large Portobello Mushroom
  • 15ml white vinegar
  • 15ml olive oil
  • 2 x 1cm slices Haloumi Grilled
  • 15ml extra olive oil
  • 2 x 1cm slices red onion and Large Tomato
  • 1 x Grilled Burger Bun of your choice, we like to use a milk bun 50g Plain Greek Yoghurt 10ml lemon juice Salt and pepper to season

Method

For Mushroom-

Dress with 15ml olive oil and white wine vinegar, season with a pinch of salt and pepper, roast at 180c for 15-20mins

For Haloumi-

Place small pan on high heat, add oil to pan followed by Haloumi, flip Haloumi after cooking for 2 mins, cook for further 2 mins or until desired colour achieved and remove from heat

For bun-

Cut bun in half and cook either on hot bbq grill or pan for 2-3 mins or until slightly charred and set aside

For yoghurt-

Mix yoghurt, lemon juice and a pinch of salt and pepper in a mixing bowl

 

To assemble, spread yoghurt sauce on base and top half of bun, place onion on bottom half, followed by tomato then Haloumi and finally the mushroom, then the top half of bun,

 

Serve sliced in half on plate with plenty of serviettes!
