1/4 cup Plain Flour
1 Calamari (scored) Tube
4 Cherry Tomatoes
15gms Sliced Onion
1 Freshly Squeezed Lemon
1/3 Cup Olive Oil
Preheat oil in deep fryer to 180 degrees
1. In a small bowl, mix together flour, salt & pepper.
2. Dust calamari through flour till combined.
3. Slice calamari tube into 2cm strips.
4. Place calamari in fryer for 2 to 3 minutes or until light brown. Don’t over cook, otherwise, you’ll find it to be very tough!
Place mesculin, cherry tomato, red onion, cucumber in a bowl and mix with lemon dressing (mix freshly squeezed lemon juice with olive oil until combined).
Serve with fresh lemon.
